Perhaps this week I will post about something besides dinner plans? Time will tell. In the interim, let’s discuss dinner.
It’s not quite fall weather here yet – we have been enjoying hot, summery days for a long while now, and have another stretch of days in the high 70s ahead of us. Despite the persistence of summer – which I am thoroughly enjoying – there are hints that fall is on the way. A few trees have begun testing out their fall fashions, a clump of leaves here or there bursting into gold or orange. My least favorite is the darkness greeting me each time my alarm goes off; Carla disagrees with this change as well, meeting the mornings with a disbelieving, “but it’s still dark!” Aside from a nod here and there to autumn’s imminence, I’m sticking with summery foods for now.
Dinners for the Week of September 15-21
- Breakfast for Dinner: My husband wants to make waffles, so waffles we shall have! I will bake some bacon and mix up some scrambled eggs to go alongside.
- Szechuan Stir Fry: We haven’t had this in a while – or any stir fry, really – so I’m in the mood.
- Southwest Salad: Recently my husband mentioned that he enjoys a salad most when it has a theme; I’m happy to oblige.
- Mulligatawny Soup: We’re supposed to get at least one rainy day where the temps dip a bit. Soup will do nicely.
- Ham Sandwich: We’ll round out the week with some ham sandwich, our shorthand for “eat what you will.” Only my husband will eat an actual ham sandwich.
I am also in the mood for pumpkin bread. Or maybe I’ll try pumpkin muffins. We’ll see. I have a can of pumpkin puree just waiting to be put into service.
Suzanne, I am SO tired because my parents were here all weekend and I had dinner for nine people on Saturday. SO MUCH FOOD.

And breakfast for supper is always SUCH a hit. Our waffle maker is slowly dying and so I just have avoided making waffles instead of, you know, ordering a replacement. I need to get on that stat. We used to have waffles every Friday night and I loooovved it, but it’s been well over a year since we did that reliably. Now I’m thinking about waffles.
I make pumpkin bread year round, because my people love it – but I do make it quite often in the fall. It’s a great tailgate food.
We are struggling to manage leftovers. Our built in eating machine, also known as Reg, is rarely home. I’m struggling to find a balance as far as the amount of food to prepare. I still make meals for my folks and I still plan on having Reg take a bunch of portions of dinners back to Indiana with him when he pops home. I have no idea what we are going to eat this week. Hoping to not have to throw away anything!
This is a solid plan! Can someone work on teleporting so that we can all come over for dinner?

I could happily eat breakfast for dinner every night. And, that Szechuan stir fry sauce has become a staple in our house (thank you!)
Pumpkin bread is the best and banana bread is absolute garbage- and I’ll fight anyone who argues either point! Lol
I have been thinking of making pumpkin bread some time in the next few weeks, too. I thought it would go well in an October care package to North.

We are doing sushi bowls tonight with steak because my family is not a fish family. And then we will have honey teriyaki chicken in the crockpot one night and beef bulgogi another night and meatball subs with salad the other night. And then leftovers and takeout. We had takeout last night in fact. I got enormous nachos.
I had book club last night and the host made a delicious pumpkin dip and it really did get me in the mood for more pumpkin-based goodies! Maybe if it ever gets out of the 80s, I’ll feel more inspired!
Salad with a theme – I love it! I enjoy themed salads more, too, like “fall” or “Greek” or “Taco.”
It’s very summerlike here. I like the sunshine, I’m OVER THE HUMIDITY!! But I am ignoring the weather and making chili tonight for dinner. But I needed something that would yield a lot of leftovers for Phil because I am traveling AGAIN this week. we did grill burgers and had corn on Saturday so at least we had one summery meal this week.
I haven’t gotten the itch for pumpkin bread yet because it’s still feels like summer here in MA too. But we are selling pumpkin ice cream if you wanna swing by 😉
Breakfast for dinner is one of my favorites! We had to take a break a couple of months after the Mr. got me one of those hotel-breakfast waffle irons because we were making everything into waffles and they weren’t special anymore (stuffing waffles, hash brown waffles, zucchini waffles…)…

Same with my kids ‘but it’s still night out!” Meanwhile, it’s 6:30AM and we are leaving at 7AM… I love breakfast for dinner!

Fall is on its way here too meaning salads will be swapped for soup. I love rice in my soup so I think I will give this one a go. Thanks.
