Dinners This Week

What shall we have for dinner this week? I am feeling very much in favor of TexMex food, probably because my friend and I ate quite a lot of that type of cuisine during her visit, and I’m missing her a lot. I wonder how much TexMex food I can get away with before my husband objects? 

Dinners for the Week of September 9-15

  • Fajitas: I love the marinade for the Cuban chicken that Ernie introduced me to a million years ago, but it IS slightly time consuming. So I am going to see if I can find a simpler recipe that’s acceptable. 
  • Chicken and Broccoli: I have some broccoli to use and some frozen chicken breasts that I can do… something with. Probably I will pair this with some couscous.
  • Pulled Pork Enchiladas: I have some frozen pulled pork that needs to be eaten and this seems like a good way to mask its original flavor (which wasn’t great).
  • Teriyaki Chicken/Salmon Salad: Lots of romaine lettuce, some mandarin orange slices, some slivered almonds, shredded carrots, red bell peppers, red onion, sugar snap peas, and a store-bought sesame ginger dressing sounds good and fresh. 
  • Taco Party: We are having out-of-town family over for dinner one night this week and my mother requested tacos; who am I to object?! I will make ground beef tacos for my parents and child and chicken tacos for my husband and whoever else prefers chicken to beef. Guacamole and margaritas on the side. 
  • Chili: It’s football season once again, and football means CHILI.

  1. Chili is going to show up on our menu this week too.

    Mashed potatoes, veg, and chicken tenders another night.

    Sausage, rosee sauce over pasta another.

    Pulled pork + coleslaw and roasted potatoes another

    And I know I have the other night planned but can’t remember. Maybe leftovers?!

    Oh – right! It’s pizza. My daughter is hosting a Back to School party and we’re going to buy pizza for that. The thought of making homemade pizza for a dozen people is too daunting…

  2. It’s officially soup season, so we’re doing all the soup! Pumpkin soup! Potato soup! Butternut squash soup! ALL OF IT EVERY DAY.

  3. Shrimp and veggie stir fry

    Grilled cheese with fresh fruit and veggies and dip

    Cheese and veggie quesadillas w/ chips and salsa, etc

    Portillo’s take out (yuck– bday kid request)

    Some kind of fall pasta situation with season veggies (I need to go to Trader Joe’s)

    Pizza Friday with a Halloween movie

    Aaaand another night out (that’s 3 if you count the pizza **yikes face**)

  4. I am sensing a theme!

    Since it’s Birthday Weekend, and we have my parents here, my husband is making a brisket on the smoker. This means I will make kale salad, coleslaw, Guinness baked beans, and cornbread. Oh, and of course, the birthday cake I told you about!

    Friday will be my go-to “guests are coming, but when” meal and it’s courtesy of you – chicken shawarma, with falafel for the vegetarians (ME, ONLY ME).

  5. S: We went to a music festival and ate there

    M: Stuffed tomatoes and vegetarian fish filet

    T: Yellow squash au gratin and veggie hot dogs

    W: Vegetable soup and grilled cheese

    T: Peanut soba noodles with tofu and veggies

    F: Homemade pizza

    S: Undetermined. Noah often doesn’t plan until the day he has to cook

    I have an extra cooking night (Thursday) now that North’s at college and I am getting used to having to plan more meals.

Dinners this week include M: falafel bowls, T-F: something with eggs, some kind of salad, probably with meat (maybe a taco salad?), and probably ham sandwich. Sa-Su: probably eat out with friends. All TBD.

  8. Oh! Your visit with your friend! Other than Tex-Mex (yummy!) how did it go?

    Food around here? Who knows. But enchiladas sound scrumptious. Maybe I’ll float that as an option for lunch tomorrow.

  9. Hmm, you’re right- football means chili! Maybe I’ll make chili this weekend. Our dinners this week will include a combination of leftovers, pasta, and takeout. Once again I didn’t do any meal prep over the weekend, so here we are.

  10. Fajitas, those do sound good. Might have to add that to next week. For this week, I’ve got a chicken/rice/parmesan one-pot meal with a bagged salad kit; some smoked sausage I’ll probably roast with potatoes (husband is tired of it but I never am); and I made 7-layer taco dip on Sunday afternoon for football watching, that’s “supplementing” (or, being) dinner on a couple of nights.

  11. I only make that Cuban chicken rice bowls when I have a lot of time and have added all the ingredients to my shopping list, in other words – not often.

    We had leftovers last night. Coach wanted us to eat more leftovers tonight, but I put Campbells golden chicken and noodles recipe in the crockpot, paired with egg noodles. There are too many sports to get to this evening to heat things up. I’m gonna scoop food from the crockpot and add it to thermoses.

    Our leftover situation is a bit nutty, as I’m not quite adjusted to not having Reg here all week. He eats 2-3 dinners a night. Also, we really need to get to the grocery store. I’m not yet in a rhythm for what day groceries will be purchased this school year.

  12. How did your friend’s visit go? I hope you had an excellent time!

    It’s always a good time for TexMex! That is a cuisine I love. We had tacos on Saturday and then I used some of the leftovers to make nachos on Sunday. And then I left my family and flew to Charlotte so am off the hook for meal prep until I’m back on Friday but we are going to my MIL’s that night as we are staying with her since my race is close to her house on Saturday. So am getting quite the break from cooking and I am not mad about it! (although I will be ready for homecooked food when this trip is over..).

  13. We had calzones last night. I do calzones by making boring pizza ones for the boring people in our family and then filling mine and Elizabeth’s with whatever is around in the fridge. I had ham and three kinds of cheese and sauce in mine. Elizabeth did turkey and cheese and sun dried tomato pesto in hers.

    We are having pulled pork from the crock pot tonight. And chicken satay and homemade beefaroni later this week. I also made beef stew on Sunday but we ended up not eating it (we got surprise fed at activities and weren’t hungry at dinner time) so we will eat that leftover one night.

  14. I love fajitas! Your pulled pork enchiladas sound amazing, I love pulled pork, and I love enchiladas.

    Sunday we had ‘European dinner’, which is bread and cheese and fruit and sausage, like a big charcuturie (I can’t spell that close enough to correctly for my spell check to help. You know what I mean.) meal.

    Last night we had leftover chili from the freezer. Well, my daughter did. My husband and I are on staycation and had a big lunch, so we thawed the chili but did not eat it. I had an apple.

    Tonight is Mediterranean feast (grilled chicken, hummus, pita, salad, dolmas).

    Tomorrow we’re going wine tasting, not sure what dinner will be. I bought my daughter a frozen pizza. Maybe we’ll have the chili we thawed.

    Friday we’re going on a hike during the day. We usually go to dinner on Fridays, so not sure what that will end up being.

    It’s kind of a wild west week of meals around here!

  15. I’ve been thinking about making chili all week. I like to use bison and two kinds of beans, kidney + black. It’s easy enough to through together and then let all the ingredients get to know each other in a slow cooker. This weekend I’m making it for sure.

  16. Gosh, I thought I commented on this, but I don’t see it. Actually, I thought I commented twice on it because I had a follow up comment. Did I dream it? Probably! We’re on vacation this week (but at home) so meals have been a grab bag. I love tex mex. My favorite fajitas are a Tyler Florence recipe for skirt steak fajitas. We haven’t had the in AGES, so I’m thinking I may make them next week. Yum.

  17. Ohhh chill sounds good. I need to do that one of these days. Specially great when it’s windy and rainy outside.

    I dient cook this week as I was running around most days.

    Tonight it was TikTok potatoes and chicken fingers but having breakfast at 4pm didn’t rally make me want to cook dinner.
