Dinners This Week

Ugh. This again? I really have to plan meals again? 

I think instead of planning meals, I am going to shop my freezer for food this week. Maybe supplement with fresh veggies if I need to. I am pretty good about buying meat on sale and freezing it, and then dipping into that rather than buying meat every week (beef in particular is SO EXPENSIVE omg), but there are some things that I tend to overlook time and time again, and some things that get buried under easier-to-prepare, more interesting things. It’s definitely time to do a clean out. This is likely to elicit such exciting experimental meals as We Have So Much Leftover Chili, Like, Seriously, So Much, and How Long Does Vacuum Packed Cod Really Last?, and Where Did These Short Ribs Come From?, and I Think Maybe Pork Chops?

Can’t wait.

  1. LOL– I did this awhile back because I was on a make one/ freeze one kick and had tons of amorphous freezer-paper-wrapped casseroles and lasagna. It was a very cheesy couple of weeks.

    (Made the chickpea sweet potato stew yesterday with plans to heat and serve today– wish naan dippers and Jasmine rice, plus some mystery hot veg (ben’s choice– will it be cauliflower? green beans? carrots? I can hardly stand the excitement)– and it smells amazing.


  2. I noticed that basic ground beef was SUPER expensive the last time I bought it recently!! I don’t know if I just didn’t pay attention before or what, but jeesh. It was a LOT.

    • I read something about cattle prices skyrocketing, so it will probably continue to go up and then hopefully drop again at some point. I love vegetables, but I also enjoy beef!

  3. Shopping the freezer! So smart. I have filled an entire freezer drawer with grated zucchini and roasted tomatoes. I need to use up some of it but I’m still getting zucchini and tomatoes from the garden!

  4. So timely. I am great about putting things IN the freezer, but awful about taking things out of the freezer until they are no good. I wondered while at the store this week if maybe I had some meat in the freezer as I was buying more. I decided to do a freezer search before buying meat (starting next week, because this week, I went ahead and bought it).

  5. I feel you on the meal planning/making fatigue. We had our good old chicken tikka with cauliflower and peas which is always a hit with the 2 adults. Tonight I’m making a ground turkey tamale thing that Taco might eat and Paul certainly won’t. I volunteered at his school today and it was interesting to see what he ate/what other kids packed. Lunch is free in MN so Paul does not pack a lunch (thank god). I was surprised to see that he ate some pita with some sort of chickpea hummus type of deal? It did not look visually appealing at all, but he ate all of it and it was kind of cute to see him using a knife to spread it over his pita. I guess we need to start buying hummus as I was not aware that he would eat it!

    • You are very brave to go to lunch at the school, but how fun to see Paul in his daytime habitat! And hummus! That’s excellent! I wish my kid would eat hummus – she likes chickpeas, but only roasted ones.
