It is the last week of April and oh, I am so sick of dinner!
Dinners for the Week of April 24-30
- Southwest Salad: The recipe at the link, which is delicious, has evolved into a far lazier version that is my current go-to salad. I just chop some lettuce, make some black beans, throw ’em together with some avocado and lime juice, and call it a day. Throw on a handful of frozen corn if I’m feeling fancy. (“The corn is… frozen? Really? Is that weird?” says my husband.) Maybe I’ll plop on a couple tablespoons of sour cream and drizzle on some sriracha to make it seem like there’s dressing. I put chili lime seasoning on a chicken breast and cook that for my husband. Sometimes I’ll do salmon or some shrimp if I am motivated to do so. It’s easy and my husband hasn’t yet mentioned that we eat this much too frequently.
- Roasted Veggie and Lentil Salad: This sounds really tasty and fairly easy, once you get past the prepping. Probably there would be lots of leftovers, too, which is important these days.
- Spicy Chicken Wraps: These look easy to make in advance and then eat multiple times throughout the week. Considering my intense love for tacos, you may be surprised to know that I do not like wraps. “But isn’t the exact same thing as a taco, Suzanne?” you might ask, and I would say, “Call it a taco, I will eat it; call it a wrap, I refuse.” Words mean something, people. What I am saying is that I would probably eat this in bowl form. My husband can put the chicken and lettuce in a wrap if he wants to. I don’t tell him what to do.
- Tacos: Let’s put some REAL tacos on the menu.

This is the weekend we are listing the house so I will at my parents’ (i.e., not making dinner) for at least two nights. Everything feels up in the air right now! But tonight is pasta night so at least something is under my control.
PASTA NIGHT. That is a great way to exercise control where you can.
That stuff all looks great to me, but I am a great lover of salads. I could just eat a different salad every day and be happy. However, I am currently experimenting with how different foods affect me, so am trying to stay away from cold vegetables (!) so have been eating more cooked meals rather than salads. We shall see how it goes but I am looking forward to hopefully getting back into salad world.
My dinner plans this week will be mostly meat, carrots and zucchini! I found zucchini at a really good price so I bought a lot of it and I wanted to make a big thing of carrot soup so I bought a lot of those…I need to use them all up, plus I am trying to whittle down my freezer meat stash, so it’s ground turkey for the win!
I love salads, too! Meat and zucchini sound excellent. I love zucchini. Not as big a fan of carrots unless they are raw though!
No, I cannot believe that next week is May! But I’m happy about it- we’re all ready for school to be out around here.
That lentil salad looks really good. Maybe I’ll make it this week! I agree, I’m sick of dinner too. Why does this have to be so hard???

This is me, Suzanne. I am in use-up-everything-in-the-freezer mode, so it should be relatively straightforward this week. Defrost some soup, some pasta sauce etc. But I am definitely feeling ready to not cook for a while!
And no, I cannot believe next week is May. I’m really not feeling ready at all. As much as I tend to dislike winter weather, I really leaned into the hibernation aspect this winter and I’m feeling a bit resentful that I need to put on real clothes and engage in the real world again – ha!
It is so great when you can eat straight from the freezer. I love that feeling. I feel you on needing to wear real clothes! I am not ready for that, either! I am especially not ready for my arms and legs to be out in public lol.
I’m making broccoli-cheddar soup tonight because it’s a reliable hit (and I know the kid won’t be pleased with the next dinner– asparagus ricotta toast– because they don’t like asparagus).
May always sneaks up on me and that’s bad because my eldest’s birthday is the first week of May. Other than a couple books, I don’t know what we’re getting him. Oh, and we need to get a COLLEGE GRADUATION gift, too.
College graduation!!!!!! Aiyeeeee! So exciting! And also, how is he graduating already?!?!
I used to be an enthusiastic cook a long time ago. Now, I’m so sick of thinking about and making dinners. I actually think I’m Burned Out. Thank goodness it’s just my husband and me, and he doesn’t complain and likes simple dinners.
Sometimes, I actually think, “Why do we even still have to eat?!”
Yes. I mean, I love to eat. But I am very very tired of everything that goes into making eating happen.

May is a fabulous month, so I’m excited for it to come! It’s warmer weather! My husband’s birthday! Our anniversary! It’s going to be great! (But we’ll still have to make dinner. Every. Damn. Day.)

Although I say I like wraps, I seem to always deconstruct them after the first few bites. I do love breakfast burritos which is kind of like a wrap.
I like “burritos,” but really what I do is wrap black beans in a tortilla, cover it with cheese, and then put it in the oven until it’s just a melted cheese lump. THAT’s a wrap.
May is my birthday month AND mother’s day– and this year they’re back-to-back, so I am all in for May. These dinners sound great! I will eat anything in a tortilla– call it whatever you like.
I admit that I’ve been phoning it in quite a bit when it comes to dinner. (and by phoning it in, I’m not saying that we are ordering out. I wish that were the case). I feel bad for the two youngest kids living at home. I do NOT feel bad for Lad, as he needs to move out or offer to make dinner, or maybe even clean SOMETHING or put SOMETHING away, like his own shoes or his 12 coats/vests/hoodies in the kitchen. See, time to move out.
I have been relying heavily on rotisserie chicken to feed us. Our Easter leftovers were stretched WAY farther than any of the guildelines for eating old-ish food would ever allow.
We have a rotisserie chicken in the fridge and will probably offer that tonight. Hooray. I might mash some potatoes out of guilt. Beyond that? No plans for anything dinner related. We haven’t had tacos in a while and I always have what I need for that, so maybe I can throw some chicken meat and salsa in the crockpot tomorrow.
I love throwing a handful of corn into dishes like your Southwest salad. But you better believe that every kernel of it comes from the freezer. Who has time to steam up a cob of corn for something like that?
I love that you post these! It gives me ideas of what to cook almost every week. I like to cook and live to try new recipes but LOATHE deciding what to make all the time. My husband is finally clueing in – instead of saying “I’m easy, anything is good” (arghhhh) he now gives me one or two ideas. I made your broccoli & beef last week; it was quite good!
I need to check out the lentil salad. That sounds right up my alley. I made a chicken and broccoli curry last weekend and then we grilled ahi tuna and asparagus last night when I got back from my Chicago trip. Tomorrow we are getting take out – take and bake pizza and a bagged salad. My older sister is in town for a conference so she is coming over for dinner and we are going the easy route!!
Ha! I have been following How Sweet Eats for years and often print out recipes of hers that sound delicious and then just… don’t make them because I’m too lazy. I completely approve of your simplified version 😀
I’m just coming out of a dinner slump, mostly related to my husband being out of town for longer than normal stretches + lots of school/sports activities + a cold that was pretty short lived but still zapped my energy. This week I actually felt motivated to plan dinners that require more than throwing frozen things on a pan or ordering takeout, but we’re going out of town Friday night so accounting for that plus a night of eating up all the food of the fridge made for a short week of menu planning!
OK, I’m HERE for that lentil & veggie salad. I shall share with my mom, too. That looks wonderful! I do not envy you in the slightest. If I had to feed other humans regularly, I would be crying in a corner. Hang in there…
