Dinners This Week

We finally had some sunshine and heat this weekend. Enough so that I wore a sleeveless shirt one day and a skirt and sandals the next. It is supposed to drop into the thirties again in the middle of the week though, so I am trying not to get TOO comfortable. I do wish there were a more gradual shift from winter to EIGHTY-DEGREES, though. I prefer to linger in the 60s for awhile. 

Then again, it is nearly May. May. May is NEXT WEEK, people. How. And when. And why. Time is a slippery fish. 

I think I may try to fire up the grill a couple of times, while the weather is nice? The heat certainly makes me crave things will grill marks.

  • Takeout and various other easy meals.

I realize I don’t have sides planned for any of these meals… but… that’s more than I am capable of at this moment.

  1. Our weather has been…depressing. Cold and windy, sometimes with a bit of rain thrown in for good measure. I’m really desperate for a warm, sunny day (without wind; the wind is really the kicker lately as it makes everything so much less pleasant outside).
    Oh well. This is spring. And I know the best is yet to come.
    We just brought our BBQ out of the shed last week; we’ve yet to use it, but it’s all cleaned up and ready to go. I don’t touch the thing – grilling is 100% on my husband. He loves it (and is so patient) and I am just not a fan of doing anything with a BBQ…except eating the delicious food that comes off of it!

  2. It’s supposed to be nicer this week but we had SO much snow and cold this past week. I JUST WANT TO RAKE THE LAWN IS THAT TOO MUCH TO ASK. Yes, it seems to be. Well, what can you do? Yesterday it was nice enough to go without a sweater, so that’s something.

  3. It was in the 80s here yesterday, too. 70s for the next couple days, then cooler for a bit. Noah says in Ithaca it was 84 yesterday and is going to snow soon.

  4. We definitely could grill; it’s in the 80s regularly here. However, I have not yet swept or washed my back patio of all the early spring pollen so everything is covered in yellow dust. When will I find the time to do that terrible chore? Who knows. I hope to pair it with the more interesting chore of planting pretty flowers… but can’t get to it this coming weekend. Maybe I can on May 7? No grilling for us until then!

  5. I am SOOOO off chicken at the moment- only way I can bear it is if it’s marinated and grilled and then has cheese melted over it and served with a garlicky aioli on a bun as a sandwich. And that’s good… but we can’t have it every day. I am going to do pork lettuce wraps tonight. And beef Thai salads at some point this week. My husband hates cod and shrimp, which both sound good to me but I can’t force him to eat it all the time… sigh. That you have to feed a family everyday (at least a few times a day!) takes up an unreasonable amount of headspace sometimes.

  6. Yum! I would certainly be happy with those dinners. Most of my favorite meals are all-in-ones like stir fry or tacos that don’t need sides, so when I do a traditional main I’m always at a loss. In our house it’s a rotation of rice, mac n’cheese, and mashed potatoes plus a frozen veg. Yawn.

  7. Weather has been all over the map here also. Main thing slowing me down is the outrageous, seemingly constant high winds. I don’t grill, but I would think twice under current conditions.
    I need to pick up limbs so I can start mowing, but even with a hard hat, it seems like a fools errand. Yesterday would have been perfect, but I was recovering from an actual reaction to my 2nd booster. Zero reactions outside of a sore arm to the first 3, but it seems my body finally noticed?
    Meanwhile, I’m so over the meal plans and cooking, but unfortunately, I still really like to eat. Go figure.

  8. Today was right about 80. It’s supposed to get colder later this week (high 60’s, I think) but mostly, I believe, we are out of the woods for winter weather. The Husband has fired up the grill a couple of times already and has even put the smoker to use a time or two.

  9. It was super nice this weekend and today but I have not looked at the forecast for the rest of the week. I am sure we will hit the expected humidity sooner than I’d like, so head in the sand.

    Tonight is garlicky chicken ginger rice noodle soup, tomorrow is tacos of some sort, Wednesday is salmon cakes with lettuce wraps, and Thursday is baked ziti.

    And that is assuming that we actually COOK all of that, rather than just sighing and ordering delivery.

  10. We had that same weather pattern here in SW Michigan – it was 84 on Saturday, and right now it is in the 30s. And I left a comment on my weatherman’s FB post (yes, I’ve been reduced to complaining about the weather) saying exactly what you did – I’d rather have a few weeks in the 60s than go from winter to 80+ degrees!

    I have never grilled – that was always Dave’s job, and I gave his grill to my son-in-law. But a new BBQ place is opening up in our small downtown, so I plan to give them lots of business this summer! 🙂

  11. It’s been really cold here. Right now the feels like temp is 22F thanks to the wind. Bleh. I’m so over my winter wardrobe! That said, we are going to grill tonight because why not! So we will have seared ahi tuna and asparagus – none of which my children will eat. But oh well. They will eat banana pancakes with peanut butter on them. The pancakes, not the children, although Will is going to inevitably end up with peanut butter all over himself. Really love it when he touches his hair w/ his peanut buttery fingers.

    Besides that, I am planning to make lentil enchiladas later this week. And that’s the extent of our meal plans!

  12. It was warm here on Saturday but I ended up hosting Curly’s travel b-ball team between games. The kids all hung out and ate outside and the coaches and parents and I hung out inside the kitchen, I suspected this would happen, and it all made sense. The team had a blast. But man oh man did I want to sit on the deck and get some sun. Now it is the upper 40s. The pits.

    I do not grill. I should, but that is Coach’s thing and it is nice that he does the grilling so that I don’t have to do ALL the cooking. My fear is that if I start grilling, all meals will fall to me by default. No thank you.

    I did try grilled salmon on a salad recently in Florida and I am wondering if I might be able to eat fish if I learn to grill it, instead of flat out hate fish.
