Another Call Week is over – woo hoo! But that means I have no excuse to persist in Lax Meal Planning. Boo. Plus, Valentine’s Day is Friday, and I always feel some (100% self-imposed) pressure to do Something Special. Ugh. Maybe I will serve Reese’s peanut butter hearts and call it a day.

Are you making something special for Valentine’s Day? Whether you are or you aren’t, what’s your favorite Valentine’s Day candy?
We live in a small southwestern Michigan town that has a candy shop which has been around for almost 100 years. I like to pop in there and treat us to their handmade candy on Valentine’s Day. 🙂
We’re having homemade manicotti for dinner that day. I found a recipe that makes the manicotti like crepes and it is SO GOOD (https://www.epicurious.com/recipes/food/views/manicotti-109442). I always make the full recipe, we eat a few, and I freeze the rest. I’m just reheating the last of the frozen ones, so it’s no work on the actual day.
Instead of cooking dinner that day, I’m making an Italian sponge cake with a filling of strawberries and whipped cream made from coconut milk. My husband has developed a lactose intolerance from the chemo so I like to challenge myself to find lactose-free desserts for him. We are pretty excited about this one! (Although he’ll still have to take tablets before he eats dinner, obviously.)
And his appetite is fantastic so YAY! We are celebrating the heck out of Valentine’s Day this year. <3 I have to say that everything you're planning this week sounds amazing … don't be surprised if I show up on your doorstep! 😀

Oooh oooh oooh! Nothing out of the ordinary until Saturday, when we are having friends over – we are making a Middle Eastern feast! My husband is making chicken shawarma, the recipe for which I got from YOUR blog! Also we are having falafel for the vegetarian option, an Israeli salad, a whole bunch of dips with crackers and veg (my cashew cheese, plus tzatiki, hummus, baba ganouche). I’m also making a heart shaped strawberry cake, in honour of Valentine’s Day!
That sounds SO FUN! And I love that chicken shawarma recipe! I don’t know if you DO this, because it has obviously been infused with chicken juices/fat, but if you DO, the sauce and onions are so good, drizzled over couscous and steamed/roasted veggies. Just FYI.
Making Italian sausage and pepper sandwiches tonight, leftover lentil soup tomorrow, and a question mark over the rest of the week aside from a dinner, as yet figured out, titled “something special” on Friday!
We will most likely give Valentine’s Day a polite nod and exchange cards (but based on the fact we can’t remember our anniversary – who knows?!) and maybe a trinket – but we generally don’t really celebrate. Any chocolate is always a Valentine favorite – I’m really tempted by those Reese’s hearts. I can never resist their Easter Reese’s eggs!
I maintain that their Easter eggs are the BEST candy of all. They are somehow different from all other Reese’s products – I think it is the ideal ratio of chocolate to peanut butter.
Dinners this week is a very good question. We had chicken tonight. Nothing planned for Valentine’s Day. I am not a huge candy fan- prefer baked treats but I do enjoy Reeses Peanut Butter anything.
Often on Valentine’s Day we have grilled cheese cut into heart shapes with a cookie cutter and tomato soup. It was something I did when the kids were little and it stuck. But this year it was a Friday and we always have pizza on Friday so it was a dilemma. North solved the problem by making the grilled cheese on their cooking night (Thursday) and then volunteering to make a heart-shaped pizza on Friday.
