Well, thanks to your encouragement, I have persuaded my husband that we should try a meal delivery service. I did some research (looking at reviews, clicking through some of the menu items), and in the end was choosing between Sun Basket, Hello Fresh, and Home Chef… and then went with Hello Fresh purely on price. The first two meals – which arrive next week – cost $10.95, which includes shipping. Worth it, just to try. And I am really excited to see what it’s like!
In the meantime, I must plan out the entire week’s menu myself. This week is all about de-toxing from the carb overload that was, basically, two weeks of Holiday Eating. Did I make a second batch of garlic goat cheese mashed potatoes, just for myself and my husband? Yes, yes I did. Did we have a family pizza night? Sure thing. Did I also maybe eat some Thanksgiving Nachos? Yes indeedy. Time to reset.
My body is already wondering where all the carbs have gone. I am distracting myself from my dearth of mashed potatoes with vigorous shopping.
Here’s what we’re eating this week:
Dinners for the Week of December 3 – December 9
- Sautéed Cod with Lemon and 10-Minute Spicy Zucchini Noodles
- Air Fryer Chicken Breast with Roasted Green Beans
- Chicken and Zucchini Stir Fry with Couscous
- Slow Cooker Teriyaki Chicken with Salad
- Pan-Seared Swordfish with Mango Salsa
- Foil Pack Cajun Chicken and Veggies
- Out
What’s on your menu?
Tis the season (to eat), and it’s just getting started! I did not go overboard at Thanksgiving exactly- but I ate candy and drank coke in order to stay awake on my drive to Louisville Friday and my way back Monday. In the absense of my kitchen while living in a hotel for 3 days, I ate other weird stuff. Sigh.
Before leaving town I made a vat of chili and sloppy Joe’s so thankfully we have some left. I made a turkey breast last night, because we still had sweet and sour green bean casserole and mashed potatoes leftover from my sister’s house. No clue what to do the other days- one of which is Tank’s 17th birthday!
Oooh can’t wait to hear how it goes!
Sounds good, and I’m seriously considering that teriyaki chicken for my week as well.
Tonight I have fresh cheese tortellini in a homemade sauce planned and then we’ll have an arugula salad on the side. It’s as close to a non- cooking meal as I can get and I could use the break honestly
Chicken enchiladas Monday. We have not eaten beef in weeks and so we grilled up ribeye steaks (in the snow) last night and served with baked potato and salad. It was SO good! My husband saw a recipe on a cooking show that appealed so he got the ingredients and the kitchen is all his tonight to make jambalaya (with shrimp, chicken and andouille sausage). Leftovers, frozen pizza and takeout for the rest of the week I think. The Cajun chicken foil packets look easy and yummy so I printed the recipe for another week since the jambalaya has Cajun seasoning.
North used to cook dinner once a week a while back and then we got out of the habit. I asked if they’d like to start that up again and they said yes, so Thursday is the dinner I’m most excited about because I don’t have to cook it myself. North’s making pasta with cheesy tomato sauce, according to the whiteboard. Oh and Sunday was pretty good, too. Beth made open-faced “turkey” sandwiches with leftover gravy from T-giving and leftover T-giving side dishes.
On Monday I made a sweet potato salad with orange-maple dressing and fake sausage. Yesterday I made a big zucchini skillet pancake with Brussels sprouts on the side. Tonight is spinach and mushroom omelets with clementine sections and banana slices on the side.
