We continue to have lots of rain, but now the rain is punctuated by absolutely glorious summer days. Sunshine, high clouds, breeze. I am out walking as often as I can because it is GORGEOUS. Makes meal planning a little tricky, though, because I want to grill as much as possible but also need to have a few options on hand when I’d rather not flip chicken in a downpour and then eat sodden chicken.
And, yes, I am back on chicken! It is a relief. Life is easier when I can eat chicken.

I have bookmarked that quinoa salad SEVERAL times now (I think? You’ve posted it before?) and I have yet to make it. THIS WEEKEND THINGS SHALL CHANGE I SHALL MAKE THE SALAD.
I am busy making food for this week and freezing meals to take to Vancouver next week. Today was Lad’s 21st bday so we had carne asada (sp?). Tomorrow pizza casserole since I realized there is a whole tray in the basement fridge from late last week. Then tacos. Make your own pizzas. A turkey breast. And then off to Vancouver for National Champs of Irish dancing.
Packing: sloppy joes, chicken cacciatore, mosticoli (sp?) -all frozen, and turkey or maybe Italian Beef.
Thx for introducing me to RecipeTinEats.com – last night I made one of her recipes, a balsamic chicken. It was fairly good, but I think I did something wrong with the foil/parchment/baking sheet, because all of that delicious glaze ended up somehow between the foil and the baking sheet! Would have been yummier with more sauce on my plate, instead! Still, I’ll be trying a lot more of her recipes. 🙂 She may owe you commission!
We were on vacation last week and everyone took turns cooking. It was so nice to only have to cook once in a week. Anyway, this week it’s back to reality.
Sunday: Grilled mushrooms, with tomato and cucumber slices, a fruit salad with yogurt dressing
Monday: Black bean and corn salad with avocado slices
Tuesday: Green beans with roasted tomatoes with garlic-cream sauce on cous cous (if I can find cous cous in the cupboard– I forgot to check before B went shopping).
Wednesday: Marinated zucchini with fried egg and lime-yogurt sauce
Thursday: 4th of July picnic (veggie dogs, deviled eggs, baked beans, corn on the cob, watermelon, ice cream with sour cherry sauce and blueberries)
Friday: pizza
Saturday: probably some kind of pasta
