My family was treated to leftovers last night (chicken chili for some, taco bowls for others of us). Tonight I’m doing baked potatoes, tomorrow night a new to me garlic pork chops recipe (https://happyhomefairy.com/recipe-honey-garlic-pork-chops/)
I am (apparently) okay eating chicken if there is enough sauce, but I am honestly fine without it. Mother’s Day was homemade hamburgers – delicious!!!!!

I made balsamic pork tenderloin in the crockpot today. Bought the meat at costco though and I thought there was more than one piece of meat in the package. Nope. One huge 8.36 pound piece. Thinking that will ladt us 3 meals. Eating leftovers in our house is mandatory. Yesterday I made sloppy joe’s. I might do chicken with peppers later in the week because I plan to make it and double it for a neighbor whose husband is hospitalized.

How do you like your Instant Pot? I’ve heard a lot of mixed things about it.
Well… the recipes we’ve tried (few and far between) have been really good. I have a curry recipe I ADORE and I love the instant pot hamburgers. My husband swears that it makes the best hardboiled eggs on the planet (I do not care for eggs). But honestly the instant pot scares me. I only “use” it when my husband is available to operate it. I am super afraid it will explode. Not based on anything at all. For additional context, I do not operate the grill either.
