Dinners This Week

I overheard the cutest conversation between my husband and daughter yesterday. We were gearing up for a trip to Target, and I’d mentioned that I wanted to see if Target carried my favorite yogurt. (Unlikely.) Then I went into my office to contemplate the depth of the sea surf endlessly through the muck of the internet do some work. My husband was looking through the fridge and asked Carla what kind of yogurt I eat. She said, “Fage.” (Rhymes with sage, to her.) And he said, “The cherry kind?” (Which, YES! Good job, team!) But then Carla said, “Wait! She had yogurt this morning!” and I heard her run to the garbage can to see what I’d eaten. (It was Chobani less-sugar vanilla cinnamon, because I was out of the cherry Fage.) I could have corrected them, but they were so obviously trying not to bother me and it was adorable to listen to them use investigative reasoning to figure it out. I don’t think Target carries cherry Fage anyway. 

This is a short week of school for Carla and a call week for my husband and I have multiple freelance projects due and also multiple appointments and I am volunteering at a school event AYIEEEEEEE so we’re starting the week with a surge of Panic Energy, which admittedly can be quite helpful if you can ride the wave rather than allowing it to drown you.  

Probably I will be eating nothing but Ham Sandwich this week – and butternut squash soup with cannellini beans, of which I made a vat yesterday – but if I DO get it together enough (ha) to make some real meals, these are the ones I’m contemplating.

Dinners for the Week of February 19-25

  • Spicy Caramelized Shrimp with Lemongrass: This sounds different and tasty. I will add some sort of veggies to it – most likely bell peppers or sugar snap peas. But I bet edamame or asparagus or even zucchini would also be delightful. 
  • Lemon Chicken: I will use chicken breast and make this in the air fryer. Probably I’ll serve it with couscous and either zucchini or broccoli.
  • Stir Fry: The Birchwood Pie Project recommended this stir fry sauce, and I’m always up for a good stir fry. If my husband makes it home in time, I’ll make it with chicken; if not, I’ll probably skip a protein and stick with veggies. 
  • Coconut Curry Salmon: This sounds so good to me right now. I would substitute chicken for salmon if my husband is home for this dinner. Rice and something green on the side. Peas would be good with a curry sauce, so maybe peas.
  • Tacos: I want tacos for my birthday, so that’s what I’ll make for my birthday! I also plan on having a big frothy margarita. YUM. If I am feeling fancy, I might make some lemon curd filled cupcakes as well, but after the cookie extravaganza of Valentine’s Day, I may be okay to skip a baked good.

    Wooof it sounds like a very busy week but I feel you on riding the Panic Energy wave – it can be a very helpful and productive wave! My older son is home this week for reading week, and so we are suddenly going through a lot more food! I kind of forgot. We are out of yogurt already!

  2. I looked at that sitr fry sauce when Birchie posted it, and rejected based on the fact that it calls for Oyster sauce and Chinese wine. But now I looked closer and saw that there’s substitutions for both of those- so maybe I’ll try it this week! Stir fry is something my daughter will eat, and it’s easy. i’m always looking for new recipes.

  3. Happy birthday week. Boo that husband is on call. Love the detective work in figuring out your yogurt. So funny.

    I need to figure out more ways to use my air fryer, or I need to remember that it’s there and use it. It’s so fast and easy, but not yet part of my comfort zone or at least not part of my go-to.

  4. OK, first off GOOD LUCK this week! Yikes, you’ve got a lot going on. With every minute that goes by you’re getting closer and closer to that giant margarita! And next up: HAPPY BIRTHDAY!!!!

    I really want the lemongrass shrimp and the coconut curry salmon. Notice that I did not say that I wanted to MAKE either of them because I’d have to go to the grocery store plus the Asian mart and then I’d have to neuter both recipes in order for my family to eat them. I just said that I want both dishes to magically appear. Hey a girl can dream right?

  5. First of new birthday greetings from me. It is considered bad luck to wish happy birthday beforehand. However I hope it will be a wonderful day.

    That curry salmon looks really good. But I won’t be able to make it. I wouldn’t know where to get lemongrass paste.

    But I think I will whip up some sort of curry this week too.

  6. Tacos and margaritas for your birthday! Excellent choice. I had forgotten about butternut squash soup…Perhaps I will make a version tomorrow, which calls for canned pumpkin as well as roasted butternut squash. It’s so good. My husband needs some meat type protein, but I can just put some chicken in there for him.

  7. I like unsweetened no fat Greek yogurt which is about the blandest thing out there in the world of yogurt. Flavors? I just can’t. Also thanks for the link to the stir-fry sauce. Now that’s where I want my flavor.

  8. That salmon recipe looks so good! I always eat chicken cordon bleu for my birthday dinner, though I will wait to eat it until my birthday buddy comes home for spring break in March. Tacos and tequila may be a great substitute meal! Happy almost birthday!!

  9. Happy early birthday! Am I remembering correctly that it’s on the 23rd? I’d drink a marg with you if I could – extra salt on the tin for me!

    I am boarding a flight as I type this so I am making zero meals this week. I made chicken enchiladas on Sunday night and the boys will get a take and bake pizza tonight. I get back late Thursday night so we will have ham sandwich on Friday. Between going to my parents last week and traveling this week, I couldn’t be bothered to plan a meal for Friday night. But the boys annoyingly won’t eat the chicken enchiladas so Phil will have plenty to eat between those leftovers an and the pizza.

    That is a very sweet convo to overhear! Good job to your daughter for knowing which brand of yogurt you like!!

  10. You do have a busy week ahead of you! I say you strap on your Floaties and ride that wave, ain’t nobody got time to drown this week! Happy early birthday I hope it’s fabulous. I love that your husband and daughter were trying to find you your favorite yogurt!

  12. Cute conversation indeed!! I just made a custom yoghut for myself this week- green yoghurt, the sour kind, add some honey, cinnamon, and chocolate chips- delicious! Happy birthday to you!!

  13. I was thinking of you the other night when I was making a literal ham sandwich for a ham sandwich dinner.
    I LOVE that pinch of yum coconut curry salmon recipe. I could drink that sauce like soup.
    Omg the yogurt convo. So sweet. I am Oikos key lime or vanilla at the moment.
