Shall we think about dinners, which is a thing that has to happen even if you are drowning in a sea of boxes and anxiety?

  1. Boxes and Anxiety; that could be the name of a band. Or A Sea of Boxes and Anxiety could be one of the songs on the new album. 🙂

    I love that all of your recipes are from fellow bloggers. However, you are so much more ambitious than I would be if it were me that was in the middle of moving! I would probably have meat and potatoes and a salad every night! Or maybe just a salad with meat on it (aka one pot meal)! I hope that your boxes and anxiety simmer down soon!

  2. Your move date must be very close, I don’t remember when it is but I KNOW THIS FEELING. You can do it! You can do it! And it’s going to be such a great feeling when you’re done. That said…aieeeeee it’s such a stressful time.
    I hope you love that lemon pasta, and I should really make it again, so thanks for the reminder! I make simple simple things as well when I’m stressed out, lots of “roast the vegetables” dishes or things like build-your-own wraps. Good luck with everything, my friend! xo

  3. Sending you so many good thoughts! When I am super stressed out (not my everyday stressed out, mind you), I go for buttered toast (not cinnamon sugar toast, which is fancy, or the new fangled peanut butter toast I can get at the coffee shop) – just buttered toast. Crispy, buttery, a little soft in the center. Or, for frozen chocolate chip cookie dough that I eat by the scoop like ice cream (my preferred ice cream alternative).

  4. Oh goodness!!! The big day must be soon for you and your family. I’m nervous and excited and happy and on the edge of my seat for all of you.

    I love how everyone here reaches for healthy food – veggies! chicken! sheet pan meals! – when they are stressed. I reach for chips and chocolate and cereal with milk. We also eat a lot of eggs when things are chaotic, but things like fruit and veggies fall by the wayside. Just keeping it real!

    Thankfully I slayed it yesterday in the kitchen and we have fish prepped for tacos at lunch + I’ll do up some local corn, a veggie soup is already prepped for tonight’s supper and tomorrow I’m going to whip up another potato salad – this is 100% inspired by you and it will be my 5th of the summer!!! – to go with BBQ for supper. I am so not a meal planner and we mostly eat the same things on repeat 2x/month. Maybe when the kids are older I’ll be a bit more creative. Then again, maybe I’ll just use the extra time to catch up on sleep and quiet alone time, haha.

  5. Wow, I would say you’re doing really well. This would be a great week of dinners for anyone, even if they’re not getting ready to move. When our kitchen was ripped apart, we had takeout for a week straight. It wasn’t all bad! We mixed it up- Chipotle, pizza, Bolay (not sure if that’s just a regional chain? It’s a pretty healthy option for takeout and we had it twice) falafel… remember takeout is always a possibility. Good luck!

  6. Haha, I forgot about that sheet pan meal! It was good, and easy! I’ll have to make it again sometime soon.

    And I agree with others who are impressed at you cooking all these healthy meals in the middle of stress and moving! TBH we would most definitely be probably just eating out, ordering pizza or having like, Ramen noodles and quesadillas. hahaha!

  7. The number of times we have popcorn and scrambled eggs for dinner cannot be overstated. It is my comfort meal of choice. I’m sure the eggs repulse you, but I’m just telling you my truth!

  8. I started answering with things I make that are comfort foods for the kids or for Beth and I realized I had a hard time answering the question for myself. I wonder what that means.

  9. Oooh, the fact that you are making that tikka masala again must mean you liked it! I was worried it would be a failure for you guys. It’s in our regular rotation!

    Phil leaves on Thursday night for his guys’ golf weekend so we only planned 2 meals this week. Last night I made picadillo in the crock pot with rice and beans. Tonight we will grill Greek turkey burgers which I assembled last night. Then i will eat simple things like eggs on toast while he’s gone!

    Dare I ask if your house has an offer?? I’m nervous on your behalf because the listing process is so very stressful!

  10. My issue is that when I’m stressed, I don’t like to cook. So it’s take out or go out!! I love my instant pot and making that type of chicken makes the best tacos and leftovers.
