La la la I have completely given up on making dinner. If I didn’t feel such a strong self-imposed obligation to post these weekly meal plans (note that I did not say “strong self-imposed obligation to feed my family” which should probably carry more weight than blogging, but here we are; they won’t starve), I would try my hardest to pretend dinner does not exist, as a concept.
Oh – I reached a pandemic milestone this weekend: I ran out of chicken. As in, I have NO CHICKEN in my freezer. A year ago, this would have filled me with doom and panic. Now, I am very “eh” about the whole thing. Obviously I will get some chicken when I go to the grocery store this week. But I feel no urgency about it whatsoever. I honestly didn’t think I would get to this point again, of taking for granted my ability to shop for groceries and access the food I want when I want it. But I suppose I prefer this to the constant fretting.
Dinners for the Week of May 18-May 24
- Slow Cooker Honey-Butter Pork Tenderloin and Baked Zucchini: I have a pork tenderloin, languishing in the freezer. I have some zucchini, slowly wilting in the crisper. Done and done.
- Grilled Chicken Taco Salad: This sounds good.
- Slow Cooker Creamy White Chicken Chili: This may sound less appealing if the temperature outdoors stays high, but right now it sounds yummy.
- Asian Glazed Fish with Steamed Broccoli: I can’t say this gets me all hyped up or anything, but it sounds palatable and not too involved.
- Tacos
What household obligation are you pretending doesn’t exist these days, Internet?
Cleaning the bathrooms. I’m definitely ignoring it, and also somehow still the only one grossed out by the bathrooms, too.
Ah yes. Who Cares Least Chicken. A game I usually lose, sadly.
Laundry. None of us have any of our preferred clean clothes.
There are four loads of laundry in various states behind me in the laundry room and I can feel them STARING at me.
I pretended for a couple of months that my oil change/tire rotation need didn’t exist. That is a chore I HATE doing — not DOING, but taking it to the place. Dumb, but I hate it. Welp, today I spent almost one thousand American dollars because I ignored it so long. I had 2 nails in one tire (a miracle I was not caught with a flat) and nearly bald tires, plus brake pads that were thisclose to grinding down my brakes. So yeah. Don’t be like me.
Well crap. Glad you got it taken care of, but I understand the impulse to delay!
What am I ignoring? Everything. But I looked up today and determined that I can’t keep my head in the sand anymore…

I had the same thing happen this week, but with chickpeas! CHICKPEAS SUZANNE. I ran out of chickpeas and put them on the grocery list and did not have an existential crisis. Well, not much of one. Also taco seasoning and spaghetti. I feel you on the “doneness” as I am so bored of making dinner I considered buying a cookbook. But then I thought maybe I’ll look at my unused cookbooks and then I thought that seemed too hard.
CHICKPEAS ARE A STAPLE NICOLE, what is going ON?!?! Major dinner fatigue all around, I guess.
I made cajun rice tonight and a meatloaf and pizza casserole over the weekend. After tonight I am going to declare thst there are plenty of leftovers. Have at it. Oh I also might thaw Italian Beef.
I have GOT to start Tank?’s graduation video. His party is not until Aug 7th for various reasons, one being the kids like the parties spread out so they can attend more. Once the grad video is started, I will be ignoring ALL HOUSEWORK.
The people who lived in our house before us loving planted lots of native plants in our yard. Lots of them. We, no joke, bought a machete last year because we need it in certain parts of our lot. (We live in town. In a normal looking house on a normal 1/3 of an acre lot. I don’t want you thinking we live on 40 acres in a rural area.)
Our local neighborhood feel good group is running a program called “No Mow May” in which people don’t mow their backyards in May because it’s best for pollinators and other local fauna.
My husband and I have taken No Mow May as an excuse to basically disregard the need to do anything outside. Therefore, it’s a jungle out there and I can’t be bothered to do anything about it. Yardwork is for people who care if their neighbors are talking about them behind their back.
No Mow May sounds amazing! But dealing with the consequences in June sounds less so.
