Dinners This Week

While I really want to continue with the Salad Theme, I may be over-salading? So there is only one – nope, two, I couldn’t resist – on the meal plan for this week. Let’s try

Note: This sounds… like not something I would eat. But it’s DIFFERENT and it has a white balsamic dressing, which sounds very tempting.

Note: THESE SOUND AMAZING. All the tacos, all the time.

Note: YUM.

Note: I will be not eating the chicken and instead loading it up with bell peppers, which are clearly on my Desert Island Food List.

Notes: I successfully ate chicken at my dinner party (no barfing!), so I am ready (I think?) to stick my toe back into the chicken water. Which sounds gross. Don’t bathe in chicken water. But this seems like a good, gentle re-entry back into chicken-ism. I will make black beans on the side, just in case this is gross.

Note: Two curries in one week?!?!?! Am I INSANE?!?!?! Perhaps, but I do not care.

  • Out for a Mother’s Day Treat!

Note: We will probably go to my favorite Mexican restaurant so I can gorge myself on cheese and chips and hot sauce.

  1. I have noticed an annoying trend in my family. Ed and Tank have volleyball games where Tank eats junk pizza or something from the consession stand because he cannot be bothered to pack a protein bar in his bag. Then I make a real dinner and he does not end up eating it. This goes undetected often because on busy nights we do not all eat at once. Also the kids go to hang out with friends sometimes on the weekend. I have noticed extra leftovers, and the kids are complaining about always eating leftovers. But I never account for that.

    So, I made barbeque pork in the crock pot Thursday, honey mustard chicken Friday, balsamic chicken and peppers Saturday, Coach grilled burgers Sunday, I made pizza casserole yesterday (and I ate taco salad with leftover taco meat that is pushing the envelope, but I lived to write about it), and now we are going to eat leftovers for the next several days. Saturday we eat at my nephew’s 1st communion party and Sunday Coach will probably grill something besides burgers. So I feel kinda free from dinners but not from whining.

  2. Salads with feta and cranberries and vinaigrette are one of my favorite kinds of salad! YUM. I hope you will like it.

    I keep trying to write a blog post today but I’m a little bit whiny and worried/anxious/grumpy, so I keep deleting. Bummer because I would have listed our meals, too, which include: meatloaf with mashed potatoes and corn, which my Dad made and froze and brought to my house (thanks, Dad!) (last night)… chicken chili with white beans tonight… pasta/zucchini noodles with Pioneer Woman’s creamy tomato sauce and a salad… and a fundraising night at the local pizza place on Thursday (hooray!).

  3. I’m going to try my hand at making the sweet and spicy dressing that Trader Joe’s puts in their Kale and Broccoli slaw premade salads since I have been eating two to three of them a week since I discovered them and at $4.49, it adds up. Pizza one night. Maybe something with pork chops if I remember to take them out to defrost.
