It was a good weekend, Internet. I spent time with my family, I had a date night with my husband, I had a long phone conversation with a dear friend I haven’t spoken to since last fall. The days were full of sunshine, and the nights were cool and breezy. It was exactly what a weekend should be. I hope yours had lots of ups, as well.
Now, let’s think about dinners.
I am uninspired, so will be pulling exclusively from my master list. Oh, how grateful I feel to Past Me for putting this list together!
Dinners for the Week of April 16-23
- Chickpea Bowls: We’re supposed to get cooler weather, so this will be nice and warming. I may make a double batch to ensure leftovers.
- Spinach/Arugula Salad with Berries and Goat Cheese: I will probably make a salmon filet to go with my salad, and a chicken breast for my husband. Carla can eat salmon and berries and I’ll see if I can persuade her to eat something green.
- Slow Cooker Chipotle Chicken Tortilla Soup: We haven’t had this in a very long time, and I feel a craving creeping on. Also, this is usually a good one for producing leftovers.
- Broccoli with Beef: I have some broccoli I bought last week and haven’t used yet. This will be the perfect vehicle for it!
- The rest of the nights will be ham sandwich or takeout.
Anything yummy on your meal plan this week?
Cooking for three people with diverging palates is tough (we’re frequently in this mode too). I appreciate your idea of grouping the meal around a common element and then improvising protein/alternatives/etc. I usually can’t bear too much repetition–but a list as opposed to a schedule sounds like a good compromise.
I like repetition until I don’t, if that makes sense. Like, I will be fine eating black bean tacos every day for a month and then all of a sudden I hit a saturation point and I cannot stand them ever again.
Oh those chickpea bowls look amazing! I’m going to have to try them once school vacation is over. I love that you had such a lovely week – here’s hoping you have another one!

Those items all sound great! I love having an old standby list and often have the same or similar things each week. I also make dinner for a friend and her family each week and since they usually have the same meals each week mine is the wild card for them, even though for me it usually is an old standby! One of my old standbys is pizza; you can make half a dozen dough balls and freeze them and then just pull out one or two the day before you want to have them for dinner, flatten them and top them and you are good to go! Also this is a hit when you have guests, as they can each do their own pizza toppings!
I looooooove pizza. We haven’t had a REAL pizza night for awhile… maybe that needs to go on an upcoming meal plan.
Yay for a good weekend and for date night! I made a mountain of burritos fixings last night and that’s about as much energy as I’ve got right now.

I have nothing new in the dinner plans this week, but I’m excited to report back that I made a version of your raspberry/yogurt/chocolate lumps. Only I did single raspberries. I used Fage yogurt, though, and I thought it was a bit too tart, so the next time I’m using some Greek yogurt with more sugar in it and I think it will be perfection!
Oh yay!!! So glad you liked it! It’s funny — I used Fage for mine and I love how its tanginess contrasts with the sweet chocolate.
Homemade one-pot Mac n’ Cheese with bacon for supper tonight. Tomorrow and Wednesday will be chili (leftovers from the freezer) and rice. Beyond that it’s anyone’s guess 🙂

Well, we ate out last night which means I have NO leftovers for tonight’s dinner (sob!) If I can find the time to stop at the store, I’m making these chickpea bowls. They sound delicious and EASY.

You bring up a good point. WHAT is for dinner this week? I think I’ll make a turkey breast tomorrow night. We thawed what I thought was chili which worked out great since it is 30 degrees here today – after being in the 80s this weekend. I thawed two bags – turns out one of them was sloppy joes. Ah, whatever. People ate.

By some wacky coincidence, we’re having (vegetarian) chicken tortilla soup and (vegetarian) beef with broccoli this week, too. Those recipes live in the “Everyone But Noah Ate It” folder so they get a lot of use now that he doesn’t live here.
He’s not a fan of fake meats.
I am glad you had such a lovely weekend! Our weather seems to be improving this week but it’s still so chilly. But we did grill for the first time last night – my husband grilled greek turkey burgers which have feta, spinach and kalamata olives. They are so good! Later this week I’m making a curry with chicken and broccoli. On Sunday I made soup in our instantpot w/ the ham bone from Easter.
