Dinners This Week

How was your weekend, Internet? I hope it was lovely and not nearly as soggy as it was here. I keep reading/fretting about the situation in California, where water is so scarce. On the other hand, I have a pond forming in my backyard and my daughter’s soccer season may well not exist and it’s hard to remember what sunshine feels like. There should be some BALANCE, shouldn’t there? 

Dinners for the Week of May 9-15

  • Sheet Pan Chicken Fajitas: It’s been a while since we’ve had fajitas. I never eat fajitas with a tortilla anyway; my husband can use the low-carb options we have. 
  • Steak Kebabs with Chimichurri: If I put these on the meal plan, we WILL have grilling weather, right?
  • Tuna Tacos: Although I am a big fan of fish tacos, I have never had a tuna taco! This sounds yummy. Hopefully our fish counter will cooperate with some beautiful tuna. 
  • Szechuan Stir Fry: This all depends on me finding bell peppers that aren’t shriveled mush. 
  • Cauliflower Shawarma and Fried Halloumi: This is my “if the stars align” recipe of the week. It sounds SO good, but also maybe kind of complicated? So we shall see if I have enough energy to make it happen. If not, I will get takeout from my local Lebanese place. They have a baked cheese that is similar to halloumi and they have the spicy cauliflower I love.

  1. Ugh, sorry it’s so soggy. We had a gorgeous week and then I woke up this morning to snow on the ground. Womp womp. I hope we both get lots of sunshine this week, my friend.
    I am very very very interested in that cauliflower shawarma. Bookmarking!

  2. Germs. My weekend was germs. And it continues. (Alex, random virus, she’s fine except for all the germs.)

    We have a phone it in meal plan for this week which now looks like genius planning on my part. Spaghetti (which may be regular or may be carbonara, we will see), breakfast for dinner (eggs perhaps or French toast), tomato soup and grilled cheese, and frittata.

  3. I completely agree with your point on balance. It was SO wet in the Chicago region last week that I wondered, why can’t other drought-stricken areas receive this?

  4. I love anything cauliflower! My older daughter makes the buffalo version–delicious. We too have had rain, but it’s normal for WA. I worry about California too. The people and the crops. The whole country depends on them.

  5. My weekend was…eventful! I’m easing into the week slowly and actually slept in this morning (I feel guilty even admitting this, but since my husband is on sabbatical I felt at liberty to do so!)…until 9 AM. For the first time in…years? It felt good.
    Tonight is curry and then Tuesday will be leftovers from a weekend cooking competition we did as a family. Beyond that, I’ll fly by the seat of my pants.
    Also, the sun is finally out here in Eastern Canada. The wind is still a nuisance, but it is so nice to see the sun (apparently it’s going to stick around for consecutive days, as well, which is a double win)!

  6. It was so wet here last week – it was nuts. I plan to make a veggie/potato dish for dinner tonight. Otherwise, no plan. We are restricted in what we can store as we are down fridge drawers in the snack bar and the downstairs fridge, so we are taking it a day at a time. We ate leftovers for Mother’s Day. I don’t want to throw food away, so we are eating whatever needs to be eaten before we need to toss it. Not. Fun.

  7. Bummer for lots of wet, soggy weather. We had some rain yesterday but Saturday was absolutely gorgeous. I logged 22k steps since we were outside so much!

    I made pork carnitas in the instant pot last night and then we’ll grill steaks tomorrow and Greek turkey burgers later in the week. And then we will make other things from the carnitas like nachos and enchiladas!

  8. I hope you had a wonderful Mothers Day! Our weekend – like most in recent years – was pretty quiet. We had hoped that Man-Child would come but darned if he didn’t up and get the flu. So we’ll celebrate another time.

    It was pretty soggy and cold here too. It seems like winter will just not go away this year.

  10. I made the Cauliflower recipe this weekend — it was DELICIOUS!!! A bit of work (and I do a lot of cooking). I made my own hummus, didn’t have any naan bread, did crispy fried tofu instead of haloumi. I have loads left for a second or even third meal I would absolutely make this again.
